Ingredients
- cooking spray
- 1 (15 ounce) can pumpkin puree
- 1 (12 fluid ounce) can evaporated milk
- 1 ½ cups white sugar
- 4 eggs
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 (15.25 ounce) package yellow cake mix
- 2 cups chopped pecans
- ¾ cup butter, melted
Instructions
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9×13-inch baking pan with cooking spray.
- Mix pumpkin, evaporated milk, sugar, eggs, vanilla extract, cinnamon, and nutmeg together in a bowl; pour into the prepared baking pan.
- Sprinkle cake mix evenly over the pumpkin mixture; top with pecans. Drizzle melted butter on top.
- Bake in the preheated oven until golden brown, about 1 hour.

You need to make this a day in advance, so much better day 2 and 3. I did do a teaspoon of cinnamon, a 1/4 teaspoon of ginger and a 1/8 teaspoon of allspice. The pumpkin pie flavor with the crunchy topping is really satisfying Thanks for the recipe.

I do not care for pecans (or worse – walnuts) too much so I substituted the pecans for ground up hazelnuts. It was to die for.

Too many pecans, too sweet, too jiggly, where’s the cake??…….endless excuses as to why this was not a good dessert.
