Ingredients

  1. cooking spray
  2. 1 (15 ounce) can pumpkin puree
  3. 1 (12 fluid ounce) can evaporated milk
  4. 1 ½ cups white sugar
  5. 4 eggs
  6. 1 teaspoon vanilla extract
  7. ½ teaspoon ground cinnamon
  8. ¼ teaspoon ground nutmeg
  9. 1 (15.25 ounce) package yellow cake mix
  10. 2 cups chopped pecans
  11. ¾ cup butter, melted

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9×13-inch baking pan with cooking spray.
  2. Mix pumpkin, evaporated milk, sugar, eggs, vanilla extract, cinnamon, and nutmeg together in a bowl; pour into the prepared baking pan.
  3. Sprinkle cake mix evenly over the pumpkin mixture; top with pecans. Drizzle melted butter on top.
  4. Bake in the preheated oven until golden brown, about 1 hour.

You need to make this a day in advance, so much better day 2 and 3. I did do a teaspoon of cinnamon, a 1/4 teaspoon of ginger and a 1/8 teaspoon of allspice. The pumpkin pie flavor with the crunchy topping is really satisfying Thanks for the recipe.

I would give it four stars but no one in the whole family liked it. Everyone took one bite and put it aside. Too many pecans, too sweet, too jiggly, where’s the cake??…….endless excuses as to why this was not a good dessert. Thank goodness I made a pumpkin cheesecake or we would not have had dessert this Thanksgiving!
