Pumpkin Pie Cookies

Instead of raisins, this recipe calls for currants and maple flavoring. The easiest part of the meal is the crust. Because so many people ask for these during Christmas, I make 20 dozen of them.

Ingredients

  1. cooking spray
  2. 1 ½ cups canned pumpkin
  3. ½ cup shortening
  4. 1 teaspoon vanilla extract
  5. 2 cups all-purpose flour
  6. 1 cup white sugar
  7. 2 teaspoons ground cinnamon
  8. 1 teaspoon ground nutmeg
  9. 1 teaspoon baking soda
  10. 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two baking sheets with cooking spray.
  2. Mix pumpkin, shortening, and vanilla together thoroughly in a bowl. Stir flour, sugar, cinnamon, nutmeg, baking soda, and baking powder into the pumpkin mix.
  3. Drop tablespoonfuls of cookie dough 2 inches apart on the baking sheets.
  4. Bake in the preheated oven until golden, 12 to 14 minutes.

Used butter instead of shortening and forgot it has more water lol these pumpkin pie flavor “pancakes” are yummy LOL

Unfortunately, we did not enjoy these. I threw the remainder of the batter away after baking the 1st batch. Wierd flavor and texture.

I doubled the recipe and made some changes. I used about a third a cup of shortening and 2/3 butter since I didn’t have enough shortening. Also did a cup each of white and brown sugar just because I prefer brown sugar. Also added mini white chocolate chips. Cookies were a bit doughy but I dont like hard cookies so I thought they were great! Would definitely make again

Yuk! Center doesn’t cook consistently, and they are rubbery, even with nuts added. Threw them out!

These are those cookies that are similar to cake. Definitely reminds me of pumpkin pie! I used a whole 15 oz. can of pumpkin and butter in place of shortening. They are addicting little cookies! I can imagine how extra yummy they would be having cool whip!
