To get rid of leftover bread, I came up with this fantastic dish. I usually just dump whatever I happen to have on hand—you may use your own discretion—into the vegetable drawer. Although my husband prefers ketchup, they are delicious either on their own or with low-fat mayo or sour cream. Enjoy it, and remember to use this recipe as a general reference.

Ingredients
- cooking spray
- 1 (16 ounce) can pumpkin puree
- 1 cup brown sugar
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- 3 cups rolled oats
- 1 cup raisins
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9×11-inch pan with cooking spray.
- Combine pumpkin puree, brown sugar, and eggs in a large bowl; beat with an electric mixer until smooth and creamy.
- Mix together flour, baking soda, cinnamon, nutmeg, and cloves in a separate bowl. Slowly add flour mixture to pumpkin mixture until combined. Stir in oats and raisins. Spread batter evenly in the prepared pan.
- Bake in the preheated oven until a fork inserted into the center comes out clean, 20 to 25 minutes. Allow to cool completely, then slice into 20 bars.
- You can substitute 1 cup of dates, walnuts, or chips (chocolate, cinnamon, butterscotch, etc.) for the raisins, or a mixture of any of these to make them your favorite!

I substituted chopped pecans for the raisins an then sprinkle some more chopped pecans on the top. Will for sure make this again – very easy to put together and it taste great!
These were easy enough to make. They were a little too soft for me but my neighbor loved them. They remind me of baked oatmeal. Thanks for sharing your recipe!
3.5 stars. Reasonably good. I think I would like them to be a bit more bread/cake like. I added craisins instead of raisins. I baked them in a 9×13 pan. (who has 9×11?) I’m bringing them to a sports event so they feel like they fit the bill for “healthy.”
These bars have a nice soft texture and were easy to make with things I normally have on hand. I think they need salt added to the batter though; their overall flavor is more bland than I anticipated.
Easy and delicious. You can any dried fruit instead of or in addition to raisins.
