You must try these nuts! Even though I dislike spicy cuisine, I adore these. I’ve been cooking them every week since my mother gave me the recipe!

Ingredients

  1. 3 large eggs
  2. ¾ cup white sugar
  3. ½ cup butter, melted
  4. 1 tablespoon vanilla extract
  5. 1 ¾ cups all-purpose flour
  6. 2 teaspoons baking powder
  7. 2 teaspoons vegetable oil, or as needed

Instructions

  1. Beat eggs and sugar in a large bowl until thick. Stir in melted butter and vanilla. Sift together flour and baking powder, and blend into the batter until smooth.
  2. Heat the pizzelle iron, and brush with oil. Drop about one tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron. Bake for 20 to 45 seconds or until steam is no longer coming out of the iron. Carefully remove cookie from the iron and repeat with remaining batter.
  3. Cool completely before storing in an airtight container.
  4. To try the chocolate version, increase the sugar by another 1/4 cup. Then add 1/4 cup cocoa powder sifted together in the flour-baking powder mixture with an extra 1/4 teaspoon baking powder as well. I find that for the chocolate mixture, the iron must be well oiled to start, and brushed with more as needed.

The recipe was delicious my only problem was I felt that a pizzelle cookie is supposed to be a little bit more crisper than what it came out as. Any suggestions for a crisper cookie.

I haven’t made Pizzelii’s in quite a few years now. I had to look up a recipe and I’m so happy that I found this one. It went so smoothly and was so easy. Thank you so much for this recipe. To the lady who said she had such a difficult time forming one Pizzelii, I might suggest that maybe she didn’t measure well. If you measure the ingredients with a scale, there is no problem with the batter. I actually swirled some homemade caramel sauce between two cookies at a time and made my rendition of Stroop waffles. They are delicious.

This recipe worked well. Next time I will try making a batch of chocolate cookies. I used my Cuisinart pizzelle maker and set it for 3, which worked great. I also shaped them with a microplane.

I made the chocolate chip ones.. DELICIOUS. Batter was very thick but when put on the hot griddle and squeezed close they were awesome… Some were a little small at first. You have to figure out your griddle, but well worth it.. I made it and did not chill them as a few said.. 10 stars!
