Ingredients
- 1 pineapple – peeled, cored, and cut into chunks
- 1 (6 ounce) can pineapple juice
- ¾ cup white sugar
- 2 tablespoons lime juice
- 1 tablespoon vodka
- 2 leaves fresh mint
Instructions
- Place pineapple, pineapple juice, sugar, lime juice, vodka, and mint in a food processor and process until smooth.
- Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions, about 20 minutes. Transfer to an airtight container; put in the freezer for at least 6 hours before serving so it can firm up.
- The vodka helps keep the sorbet soft enough to scoop in the freezer without adding flavor. If you’d like, add a different type of alcohol – experiment with different flavors!
- Use an additional tablespoon of lime juice if you like your sorbet a bit more sour.
