Pineapple Bread Pudding

This side dish, which is Grandma Mel’s family recipe, goes well with ham and green beans for Easter dinner. It is quite sweet and perfect as a side dish for a holiday feast.

Ingredients

  1. 7 slices white bread, cut into cubes
  2. ½ cup butter, melted
  3. 30 ounces crushed pineapple
  4. 4 eggs
  5. ½ cup white sugar

Instructions

  1. Grease a 2-quart casserole dish.
  2. Spread bread cubes in the bottom of the prepared casserole dish. Pour butter over bread cubes and top with pineapple.
  3. Beat eggs and sugar together in a bowl until foamy; pour over bread mixture. Cover dish with aluminum foil and refrigerate, about 3 hours.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Bake in the preheated oven for 30 minutes. Remove aluminum foil and bake until browned, 5 to 20 minutes.
