Ingredients

  1. 2 cups all-purpose flour
  2. 1 (15 ounce) can crushed pineapple
  3. 1 ½ cups white sugar
  4. 2 eggs, beaten
  5. 1 ½ teaspoons baking soda
  6. 1 pinch salt
  7. 1 cup white sugar
  8. ¾ cup evaporated milk
  9. ½ cup margarine
  10. 1 cup chopped pecans
  11. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C). Grease an 11×14-inch baking dish.
  2. Mix flour, pineapple, 1 1/2 cups white sugar, eggs, baking soda, and salt together in a large bowl; pour into the prepared baking dish.
  3. Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 40 minutes.
  4. Combine 1 cup sugar, evaporated milk, and margarine together in a saucepan; bring to a boil for 1 minute. Remove saucepan from heat and stir pecans and vanilla extract into sugar mixture.
  5. Pierce the top of the cake with a toothpick and spread pecan topping over cake.
