Ingredients

  1. 1 (12 ounce) package semi-sweet chocolate chips
  2. 1 (12 ounce) package peanut butter chips
  3. 12 ounces raw Spanish peanuts

Instructions

  1. Place chocolate and peanut butter chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until melted, about 5 minutes. Stir in peanuts.
  2. Drop teaspoonfuls of mixture onto a waxed paper-lined baking sheet and refrigerate until firm, 30 to 45 minutes.

Yum. Here is what works for me: 1 bag of semi sweet chips, 4 squares of dark bakers chocolate, 13.5 oz can of roasted/salted Spanish peanuts. I like a high nut/chocolate ratio.

I created an account for this website just to be able to add my two cents’ worth to the discussion. THANK YOU for this recipe. I was looking for a recipe that used raw vs. roasted Spanish peanuts. Instead of peanut butter chips, I used an organic peanut butter spread, so I’m sure the peanuts in the spread were dry-roasted. I added some Himalayan salt and a teaspoon of vanilla. I used sugar-free dark chocolate chips from Nuts.com and added a little low-carb sugar to the peanut butter and chips as they were melting in a double boiler setup. The result? Decadent and delicious!!!

I used creamy peanut butter instead of the chips. I think the chips would have been better. The peanut butter kept the chocolate from setting up all the way without going in the fridge. Otherwise, they were a hit 🙂

So easy and good! For one batch, I used 1 bag each of milk chocolate, semisweet, butterscotch chips along with 1 1/2 jars salted roasted peanuts. Had to use improvised double boiler to accommodate. Made 3 trays full. Takes a while to set up, will refrigerate before bagging up for gifts.
