a protein-rich, peanut butter cookie that is incredibly healthful. I was experimenting with different ways to add more protein to my 3-year-old’s diet because he is a pretty finicky eater. These cookies are very healthy and he loves them.

Ingredients

  1. 2 ½ cups all-purpose flour
  2. ½ cup raisins
  3. ¼ cup hemp seed hearts
  4. 1 teaspoon baking powder
  5. ½ teaspoon baking soda
  6. ¾ cup brown sugar
  7. ¾ cup white sugar
  8. ½ cup butter, softened
  9. ½ cup applesauce
  10. 1 cup natural peanut butter
  11. 2 eggs
  12. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Mix flour, raisins, hemp seed hearts, baking powder, and baking soda together in a bowl. Beat brown sugar, white sugar, butter, and applesauce together in a bowl using an electric mixer until smooth and creamy; add peanut butter and beat until smooth.
  3. Beat eggs and vanilla extract together in a bowl; stir into peanut butter mixture. Mix flour mixture into peanut butter mixture until a smooth dough forms. Roll dough into small balls and place on a baking sheet; press each with a fork to flatten.
  4. Bake in the preheated oven until golden brown, about 9 minutes.

Baked additional 2 minutes. Sprinkled with powdered sugar. Very good !

Good but I was hoping they’d be crispy. These are more like soft baked cake cookies. I love that they are healthy and that this is a recipe using hemp hearts.
