Delicious, energizing, and positively peachy! An excellent substitute for banana pudding is this summer pudding.

Ingredients

  1. 2 peaches, thinly sliced
  2. 1 pinch ground cinnamon, or more to taste
  3. 4 cups milk
  4. 6 egg yolks, beaten
  5. 1 cup white sugar
  6. ⅔ cup all-purpose flour
  7. 1 tablespoon vanilla extract

Instructions

  1. Arrange sliced peaches in the bottom of a serving bowl; sprinkle with cinnamon.
  2. Combine milk, egg yolks, sugar, and flour together in a saucepan; cook and stir over medium-low heat until pudding thickens and clings to the back of a spoon, about 20 minutes. Remove from heat and stir in vanilla. Pour pudding over prepared peaches. Refrigerate until chilled, about 2 hours.
  3. You might want to have your phone or a book with you; you’re going to be stirring for a while, but don’t worry; it’s worth it!
  4. For richer pudding, use 3 cups milk and 1 cup heavy cream.
  5. For an alternative presentation, fill individual dessert cups with peaches and pudding.
