The blueberry crumble bars are a perennial favorite. Though frozen blueberries work just as well, they are a terrific way to employ fresh summer berries. A spoonful of vanilla bean ice cream on top makes them even better.

Ingredients

  1. ½ cup butter
  2. 1 cup all-purpose flour
  3. 1 cup white sugar
  4. 1 teaspoon baking powder
  5. 1 cup milk
  6. 1 (21 ounce) can peach pie filling

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Place butter or margarine in a 9×13 inch pan and melt in oven while it is preheating.
  2. In a medium bowl, mix together flour, sugar, and baking powder. Stir in milk.
  3. Remove pan of melted butter or margarine from oven. Pour mixture into pan, but DO NOT STIR. Spread pie filling onto batter, without stirring.
  4. Bake in preheated oven for 50 to 60 minutes, until fruit is bubbly and batter is set and golden brown.

I like recipes like this where I almost always have all the ingredients on hand. This was really good, it was all gone before I could get the ice cream out to go with it! My family has made me promise to make it again but double the recipe. I did add 1 tsp. of vanilla extract to my milk. I also added cinnamon, nutmeg, vanilla extract and brown sugar to my pie filling to my taste. I only used 4 tbsp. of butter.

I have used this recipe since our children were little and it was one of their favorites. Today I wanted to try it again and looked for it on All Recipes. I found this recipe and saw to add a teaspoon of baking powder. Yeah, mine was always a little flat, no fluffyness, now with the baking powder, it came out great and looks like a homemade cobbler should.

This was so simple yet satisfying. You can easily switch up the fruit you make this with and the ingredients are all items I usually have on hand. I really love it for a quick, easy go to dessert. I used splenda sugar and added cinnamon on top. Poof, it was all gone in no time at all.

The way I prepared it was only 3.5 stars. But I followed the suggestions of others & increased the flour to 1.5 cups & baking powder to 2 t. I also added 6 oz. of frozen peaches, but the ratio was too much cobbler to fruit. Since I changed it, I can’t hold it against the recipe submitter. Next time I’ll use 1c flour, cut the butter in half & use an 8×8 pan. I may still add the extra fruit.

It was great,all my kids loved it,I used two big cans of peaches in heavy syrup instead of pie filling,I like a lot of peaches and not a big fan of canned pie filling,fresh peaches would be better anyway,I drained the peaches,mixed in 1/4 cup flour and 1/2 cup sugar,mixed it and poured it in the batter and it turned out great.

Super good and easy recipe, although probably add a tad more flour and cut half of that sugar out. 1 cup sugar was far too sweet for us and actually I didnt even use a full cup. I added a bit of cinnamon to add some flavor and it was delicious, next time ill only add probably half a cup of sugar. Thanks for the recipe! (literally just finished eating a slice 20 minutes ago)

Made this recipe exactly as posted. It has a nice presentation, much better than I had expected. I first tried it about 15 minutes out of the oven and it was just ok. It was much better after sitting overnight. I will cut back on the butter by half next time I make it — that’s just a personal preference.

Turned out pretty good and got gobbled up at the 4th of July cookout that I made it for. The only thing I did differently was use 2 cans of canned peaches (1 large can, and 1 regular sized can), and added some cinnamon and nutmeg to the batter. Yummy!

I added 2 teaspoons of baking powder and 1/4 tsp. salt. Bake at 400 in a 2 qt. dish and cook for 30 minutes.
