Celiac-friendly peach cobbler that is delicious. Very yummy and simple to prepare.

Ingredients

  1. 1 cup buckwheat flour
  2. ½ cup brown sugar
  3. ¼ cup white sugar
  4. 2 teaspoons baking powder
  5. 1 teaspoon vanilla extract
  6. ½ teaspoon salt
  7. ¾ cup vanilla-flavored almond milk
  8. 6 tablespoons butter, melted
  9. 1 (28 ounce) can sliced peaches, drained
  10. 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch baking dish.
  2. Combine flour, brown sugar, white sugar, baking powder, vanilla extract, and salt in a bowl; mix in almond milk and butter.
  3. Pour flour mixture into the prepared baking dish. Top with peaches. Sprinkle cinnamon on top.
  4. Bake in the preheated oven until the top is lightly browned and the peaches are bubbling, about 30 minutes.
  5. Margarine can be substituted for the butter.
  6. Plain almond milk can be used instead of the vanilla flavored.

I made it with the peaches and it was pretty good it did turn more like cake. So I just took out the peaches and substituted mini chocolate chips with it and was able to make muffins the next day. A very delicious cake base

This is a really good recipe, I added 1/4 c sugar as the peaches were tart. It’s a little more like cake instead of cobbler but really tasty.
