Overnight Oat Ice Pops

While visiting an aunt in Iowa years ago, I was handed this recipe. Even my sister, who can’t bake for the life of her, managed to make these.

Yield: 4 ice pops

Ingredients

  1. 2 cups orange juice
  2. 1 cup vanilla ice cream, softened
  3. ½ cup rolled oats
  4. ½ cup diced mango, or more to taste
  5. 4 ice pop molds

Instructions

  1. Pour 1/2 cup fruit juice into each ice pop mold and freeze until mostly set, enough so that the next layer can easily be poured on top, at least 2 hours.
  2. Combine vanilla ice cream and oats in a bowl and pour on top of the frozen layer of fruit juice. Push in fruit pieces. Add popsicle sticks to mold and freeze until solid, about 5 hours.
  3. You can use any type if fruit juice for this recipe, e.g. watermelon, raspberry, mango, pineapple, orange, etc. Add any chopped fruit that complements your juice.
  4. You can use any grains of your choosing other than oats.
