Ingredients

  1. 1 (20 ounce) can crushed pineapple, undrained
  2. 1 (3.4 ounce) package instant vanilla pudding mix
  3. ½ teaspoon orange extract, or more to taste
  4. 2 drops red food coloring
  5. 1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
  6. 1 cup miniature marshmallows (such as Kraft® Jet-Puffed)
  7. ½ cup chopped pecans, divided

Instructions

  1. Stir pineapple, pudding mix, and orange extract together in a bowl. Add food coloring and stir. Fold in whipped topping and mini marshmallows. Reserve 2 to 3 tablespoons of chopped pecans for topping; stir in remaining pecans.
  2. Top with reserved chopped pecans and chill for at least 1 hour in the refrigerator.
  3. If you like a little more orange flavor, add a full teaspoon of orange extract.
