Oatmeal pie has a pecan pie flavor. If desired, top the baked goods with chopped nuts before baking. This dish yields two pies.

Ingredients

  1. 4 eggs
  2. 1 cup flaked coconut
  3. 1 ½ cups dark corn syrup
  4. 1 ½ cups white sugar
  5. ½ cup margarine, melted
  6. 1 ¾ cups rolled oats
  7. 1 ¾ cups evaporated milk
  8. 2 9-inch pie crusts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix eggs, corn syrup, and sugar. Add milk, melted margarine, coconut, and oatmeal. Pour into two 9-inch pie shells.
  3. Bake in preheated oven until filling is browned and set, about 40 minutes.

Excellent oatmeal pie! I wasn’t sure how it would come out as the filling was more runny than I am used too but I baked for 40 minutes in a 10-inch pie pan and it came out perfect.

This is a very good pie and it does taste simalar to pecan pie. I have used white syrup in this in the past but the dark cornsyrup is better. Thank you for this recipe.
