Nutty Cinnamon Bars

It is difficult to limit oneself to one of these bars. No one will ever know that it was made with healthier components.

Ingredients

  1. 1 cup flour
  2. ½ cup low-calorie natural sweetener (such as Swerve®)
  3. 1 ½ teaspoons ground cinnamon
  4. 1 ¼ teaspoons baking powder
  5. ¼ teaspoon baking soda
  6. ¼ teaspoon salt
  7. 1 large egg, at room temperature
  8. ⅓ cup canola oil
  9. ¼ cup unsweetened applesauce
  10. ¼ cup honey
  11. 1 cup chopped nuts
  12. ¾ cup powdered sugar substitute (such as Swerve®)
  13. 2 tablespoons unsalted butter, melted
  14. 2 tablespoons honey
  15. 1 teaspoon almond milk
  16. 1 teaspoon vanilla extract
  17. ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 11×7-inch baking dish.
  2. Combine flour, sweetener, cinnamon, baking powder, baking soda, and salt in a large bowl; mix until well combined.
  3. Whisk together egg, oil, applesauce, and honey in a second bowl until well combined. Stir into the dry ingredients. Fold in nuts. Transfer batter into the prepared baking dish and smooth out the surface.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Remove from oven and allow to cool.
  5. For the icing, combine powdered sugar substitute, butter, honey, almond milk, vanilla, and cinnamon in a bowl. Spread or drizzle icing onto the cooled bars.
