a delightful way to begin the day. In order to avoid wasting leftovers, I freeze any excess in ice cube trays so that I can later just combine the cubes. My 2-year-old daughter also enjoys it.

Ingredients

  1. ½ cup white sugar
  2. 3 tablespoons ground cinnamon
  3. 1 (10 ounce) can refrigerated buttermilk biscuits, separated and cut into 1-inch chunks
  4. 1 apple, peeled and chopped
  5. ½ cup chopped pecans
  6. ½ cup butter, melted
  7. ¾ cup brown sugar
  8. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix white sugar and cinnamon together in a large resealable bag; add biscuits and seal. Shake bag until biscuits are coated in cinnamon-sugar.
  3. Arrange half the apples and half the pecans in a round formation in an 8×8-inch pan; top with half the coated biscuits. Arrange half the remaining apples and pecans in a second layer and top with coated biscuits.
  4. Melt butter in a saucepan over medium heat; dissolve brown sugar and vanilla extract in the melted butter. Pour butter-sugar mixture over biscuit mixture.
  5. Bake in the preheated oven until biscuits are cooked through, about 35 minutes. Cool fritters in pan for 10 minutes before serving.

I made this recipe as is and thought it was really good but a little dried out. The only thing I would do different next time is to not bake it as long. Ovens do tend to different, but the flavor was amazing.

Definitely will make again! I followed the recipe and the cinnamon sugar I had left in the ziplock bag, I poured onto the biscuits before the butter sauce. Tasted great.

I used a can of Grands, three apples, and left out the pecans, but otherwise followed the recipe. I was a little disappointed that the biscuits didn’t rise even a little bit, so I wound up with a pile of cinnamon sugar coated biscuits with apples, but it DID taste good! Not remotely anything resembling any apple fritter I’ve ever heard of, but it was enjoyed just the same.

I made 2 of these for breakfast this morning. Because we’re trying to limit sugar, I used only half the amount called for and used 3 apples from our tree for the two “cakes” and they still turned out great! I also reduced the butter by 1/3 and I forgot to add the vanilla extract. I’m sure it would’ve enhanced the recipe, but they came out fine without it. Next time I won’t forget to add it! Thanks for this great dish. It was wonderful with scrambled eggs. My mom, kids & grandkids all loved it!!!!!

My Family loved it. Probably not the healthiest breakfast, but perfect for a special day. I made mine with home made baking powder biscuits. I didn’t bother to cut them up into biscuit shapes, I just pulled the dough apart into rough clumps about 1/2 the size of my fist before I put them into the sugar and cinnamon mix.

This makes an appetizing coffee cake that is perfect with your morning coffee. Because my apples were small, I ended up using three, and chopped them in ½” pieces. I baked it in a round ceramic dish that was buttered to keep the round shape. Take extra care in removing the cake from the pan as mine was prone to fall apart.
