No-Churn Peach Sorbet

Made with farm-fresh peaches, this sorbet is quick, cool, and refreshing. Quick, simple, and surprisingly tasty! This astounded my family and guests beyond belief! This can be assembled in a short amount of time.

Ingredients

  1. 3 (16 ounce) packages frozen unsweetened sliced peaches
  2. 1 cup white sugar, or to taste
  3. ¼ cup freshly squeezed lemon juice, or to taste
  4. 1 tablespoon orange juice, or as needed
  5. 8 sprigs fresh mint, or as needed

Instructions

  1. Place frozen peaches, separating any that have stuck together, into a food processor with sugar and lemon juice. Blend to the consistency of applesauce, adding orange juice as needed. Taste and adjust flavor with sugar and lemon juice. Serve immediately, garnished with mint sprigs.
  2. You can use 3 pounds of fresh peaches instead of frozen. If using fresh peaches, pit and cut into large chunks. Spread peaches onto a large cookie sheet in a single layer and freeze for 24 hours.

Delicious and so refreshing! Thankfully I was only making 1/3 of the recipe (I only had 1 bag of peaches) because that barely fit in my mid-size 7 cup food processor. To make 3 bags you would need something pretty big. I’m not sure if the measurements are off, but there was nowhere near enough liquid to even get this to blend. I ended up having to use the juice of a full lemon (about 2-3 tablespoons) and almost a full orange (about 4 tablespoons) on just the 1/3 batch. The extra lemon turned out fine and perfectly balanced out the sugar without being too tart. If you have leftover and need to freeze it, be sure to remove from the freezer ahead of time to let it soften up a bit.
