Servings: 20
Yield: 20 cookies

Ingredients

  1. ½ cup milk
  2. 2 cups white sugar
  3. ½ cup butter
  4. ½ cup cocoa powder
  5. 3 cups quick oats
  6. ½ cup shredded coconut
  7. ½ cup peanut butter
  8. 1 teaspoon vanilla extract

Instructions

  1. Mix milk, sugar, butter, and cocoa powder in a large saucepan and bring to a rolling boil. Boil, stirring frequently, for about 1 minute. Remove from heat and add oats, coconut, peanut butter, and vanilla. Mix thoroughly.
  2. Drop tablespoon-sized balls of cookie dough onto waxed paper and let cool in refrigerator for at least 1 hour.
  3. Store these cookies in a cool place (like the back of your refrigerator) if you don’t intend to eat them right away.
  4. It’s important to let the sugar mixture boil for a little bit because otherwise the cookies can be quite “mushy” even upon refrigeration.

Wow!!!! These are the best cookies ever!! The only change I made was I boiled the sugar mixture slightly longer, about 2 and a half minutes, as I like a solid consistency and less runny. They turned out perfectly!

11.27.21 My husband is the chocolate fan in this house, and all I could hear when he bit into the cookie was y-u-m-m-m-m-m! Hard to believe you can get this kind of chocolate flavor with just cocoa powder. And so easy to make, as well. This one’s a keeper.

No coconut, I have been making these for years. My mom made them 40+ years ago. My brothers all make them for their families. All of us love them without coconut.
