Christmastime cooking for the family tradition. Adjust rum, sugar, and spices as needed. can be spread on crackers, toast, or baked tart shells. Placed in sterilized jars, they can be frozen or kept in the refrigerator for a few weeks. The number of servings depends on what the spread will be used for.

Ingredients

  1. cooking spray
  2. 1 cup butter
  3. ½ cup packed brown sugar
  4. 1 teaspoon vanilla extract
  5. 3 cups quick-cooking oats
  6. 1 cup semisweet chocolate chips
  7. ½ cup peanut butter

Instructions

  1. Grease a 9-inch square baking dish with cooking spray.
  2. Melt butter in a saucepan over medium heat. Stir in brown sugar and vanilla extract. Add oats and cook over low heat until combined, 2 to 3 minutes. Spread 1/2 of the oat mixture into the prepared pan.
  3. Melt chocolate chips with peanut butter in small heavy saucepan over low heat, stirring frequently until smooth, about 4 minutes. Pour chocolate mixture over oat layer and spread evenly. Crumble remaining oat mixture over chocolate, pressing in gently.
  4. Cover with plastic wrap and chill until set, 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

I made this as is, with the exception of being a little generous with the chips and peanut better. My only problem is that they disappeared so quickly!

I couldn’t believe how much butter was in this recipe in relation to the other ingredients, but made it as stated, anyway. There was melted butter pooling on top and running into the corners and underneath the bars in the pan when it was done. And there there was the extra peanut butter in the chocolate layer and on top. It seems it could cook up more like a caramel consistency with about 2/3 of the butter and cook it before adding the oatmeal. I don’t know. Something is off. Tasty, but SO MUCH GREASE. It would be better if you didn’t have to chill it to congeal the fat for it to hold together.

I used old fashioned oats and they turned out great. More crunchy outside but chewy inside. Better texture on day two.

A very good recipe! I have made it twice now, the second time with my 11 yr old granddaughter. It’s an easy one to make with kids especially when short on time

I’m not a big fan of peanut butter with chocolate, but my hubby is so I tried these. He liked them but I thought they were way too sweet. I also thought the peanut butter really overpowered the chocolate flavor. Maybe more chocolate and less peanut butter would improve it.
