Mystery Pie

Pecans, broken crackers, and fresh fruit are the main ingredients in this crustless pie. You can use a single fruit or a selection of fruits.

Yield: 1 to 9 – inch pie

Ingredients

  1. 3 egg whites
  2. 1 cup white sugar
  3. 1 teaspoon baking powder
  4. 1 ½ teaspoons vanilla extract
  5. 18 buttery round crackers, crushed
  6. ⅔ cup chopped pecans
  7. 1 cup frozen whipped topping, thawed
  8. 1 ½ cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9 inch pie pan.
  2. In a large glass or metal bowl, beat egg whites until foamy. Mix together sugar and baking powder, then slowly add mixture to egg whites, continuing to beat until stiff peaks form. Beat in vanilla extract. Fold in crushed crackers and pecans. Spread mixture evenly into pie pan.
  3. Place pie in preheated oven and reduce temperature to 325 degrees F (165 degrees C). Bake for 30 minutes. Cool thoroughly. Top with whipped topping and fresh fruit.

Surprise Pie, Cracker Pie, and now Mystery Pie. I’ve had it under all these names. My mother made this pie. I loved it then, and I love it now! It’s beautiful…until you cut it. Then the top cracks revealing that pecan filling. It’s not very pretty, but it tastes oh so good, especially topped with fresh fruit and whipped cream.

This was interesting. The pecans really added a lot flavor so that it sort of tasted like the inside of a pecan pie. However, it is very sweet. The consistency is a bit odd. I don’t know how to describe it. I would probably not make this again but I am glad I tried it.
