I have no idea how this dish got started, but we do know that my great-grandmother cooked it. It is prepared in the oven using bread crumbs and diced ham. You can fill the middle after shaping them with cheese or whatever else you like. Although you may put anything you like in the middle, I personally prefer cream cheese or cheddar cheese.

Ingredients

  1. cooking spray
  2. 1 ½ cups all-purpose flour
  3. 1 teaspoon baking powder
  4. 1 teaspoon ground cinnamon (Optional)
  5. ½ teaspoon baking soda
  6. ½ cup vegetable oil
  7. ½ cup white sugar
  8. ¼ (6 ounce) container soy yogurt

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet with cooking spray.
  2. Sift flour, baking powder, cinnamon, and baking soda into a bowl.
  3. Mix vegetable oil, sugar, and soy yogurt together in a bowl. Stir in flour mixture until dough comes together.
  4. Drop tablespoons of dough 2 inches apart onto the prepared baking sheet.
  5. Bake in the preheated oven until golden, about 7 minutes.

These were quick and easy to make and turned out great! I’m sorry I’m the first reviewer as I had to use alternative ingredients so mine weren’t vegan, but white sugar isn’t vegan anyway (research “bone char”). I didn’t have cooking spray, so I lightly greased the tray with butter. I substituted coconut oil for the vegetable oil and used 1/2 a container of strawberry Activia yogurt since I didn’t have soy yogurt. I added 1/2 tsp of vanilla extract (because I add it to just about everything I bake), and lastly, I didn’t garnish with sugar while they were warm. These cookies turned out soft on the inside with just a slight firm shell and a subtlely sweet flavor: not too sweet at all, and probably would have been fine with the extra sugar garnish. I can’t wait to make these again and try a different flavor yogurt! Give these a try next time you don’t want a traditional cookie – you won’t be disappointed!
