This delicious (and nutritious) variation on classic spaghetti uses spaghetti squash noodles. Adding more vegetables or meat in any combination would make this recipe even more adaptable.

Ingredients
- 1 ½ cups dry roasted peanuts
- 1 cup white sugar
- ½ cup light corn syrup
- 1 pinch salt (Optional)
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
- Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

Nice recipe!
I added almonds instead of peanuts. When I make it again I will add more baking soda to see if it will create more foam and crumble easier when cooled. I should have stuck with using peanuts instead of almonds as this recipe is no substitute for English Toffee with Almonds
Using a 1200 microwave I only put it in for 4 minutes to start mix then peanuts butter and vanilla then I put back in microwave for 2:30 to 3 minutes. Work quickly as brittle hardens fast.
6 minutes, add butter, then another 1:45, came out PERFECT!!!
It took me a batch to figure this recipe out. By the second one, I was on a roll – I made four batches. (Not including the first.) I gave them as neighbor gifts for Christmas and had people coming and asking me for more! I’m definitely making this again.
I really like this recipe! The salt is a must it make it taste better! Also I had a 1000w microwave and did 5 min then 3 min and it came out perfect! Another trick is to use Unroasted Spanish Peanuts they will roast when you cook the brittle! Roasted nuts will burn fast!
I’ve made this every Christmas for the last 5 years and it’s always a hit. With my 1000w MW I use 4:45 on the the first cycle and 3:00 to 3:15 on the second cycle. This year I experimented a little with the flavoring. One batch I put in 1 Tsp of Fireball Whiskey with the vanilla and got just a hint of Cinnamon. The next Time I think I would use 2 tsp. Another batch I added 1/2 cup of Ghirradelli dark chocolate morsels with the baking soda and can’t really say that I liked it but others seemed to. It is a hint of chocolate but you lose the peanut taste. I wouldn’t do that again. I also found that a table knife works well for stirring and silicon spatula for scraping out the bowl, which I used a 8 cup cup anchor hocking measuring cup/mixing bowl I bought at Big Lots for about $5. No great loss if it gets destroyed.

This stuff is addictive!! One of my favorite holiday recipes! I have noticed older Baking Soda does not work the same as brand new and its a chore to clean out the bowl but is so worth it!
Make sure to figure out the wattage of your microwave!!!! my microwave is 1200 w so my brittle was burnt.
Pay attention to the wattage of your microwave! Mine is a convection oven/microwave so very high wattage. I turned it down to half power and the recipe came out perfect. Super excited to make it again.
Love It! Easy recipe & tastes great. Like other reviewers I would also point out that you may need to adjust the time in the microwave in step #1. My current microwave takes 4 1/2 minutes- my first attempt in this microwave at 6 minutes left it burnt. Once you get the time right, it turns out perfectly.
I have a microwave that is 950w. I just made 3 batches of this recipe, experimenting with the timing each time. All 3 came out the same. Absolutely Delicious! I gave this recipe 4 stars only because I prefer a thinner brittle, and even using other reviewers suggestion of heating the cookie sheet while making each batch, it came out too thick for my Personal taste. The taste is wonderful, and it’s SO much easier than the traditional approach. Years ago I destroyed an enameled cast iron dutch oven making brittle and didn’t think I’d have the guts to try again lol. *I used a 4C Pyrex measuring cup to make this. *I cut the peanuts to 1C/ batch. I use raw peanuts, put them in with the sugar & syrup..All of the rest ingredients are the same. I add the soda by itself at the end. I butter my hands & stretch the candy out after a few minutes Have made this for years & every one raves about it.

This was awesome and so easy!! I made sure to read the reviews and get the correct times for my microwave. Also, my hubby thought great but I thought I could taste the baking soda so I would use a little less.
I have a 1000w microwave and followed the reviewer who had an 1100w. I added the salt in with the butter and vanilla. I ended up cooking an additional couple of minutes to get a light brown color. It turned out perfectly!
I LIKE this recipe. It was very easy to follow. I made this for my dad, and he said it tasted just as good as the brittle I was buying from the local bakery I will be using this recipe any time he needs more!
