Ingredients
- 4 eggs
- ½ cup all-purpose flour
- 2 cups milk
- ¾ cup white sugar
- 1 cup sweetened flaked coconut
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon, for dusting
Instructions
- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch pie pan.
- Place the eggs, flour, milk, sugar, coconut, and vanilla extract into a blender. Blend on high speed until the coconut has been finely chopped. Pour this mixture into the prepared pie pan; sprinkle with cinnamon.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Cool on a wire rack to room temperature; refrigerate until cold before serving.

This yummy custard pie got rave reviews at my Gourmet Ladies luncheon. It is beyond easy. It is good just like it is but it also makes a perfect base for drizzling your favorite fruit sauce, bourbon sauce, caramel or lemony sauce over it.
This was actually a very simple, tasty recipe. Essentially it is custard with coconut on top because that is where it migrates to in the cooking process. Everyone I fed it to liked it. Not fancy just simple.
This was not good. It was easy to whip up and bake but something is not quite right about this one.
