Maraschino Cherry Chocolate Cookies

I needed a better baked clam recipe while I was working at a restaurant. What I came up with is this. They received a warm reception. Additionally, you may spread this on crackers.

Ingredients

  1. 1 cup butter-flavored shortening
  2. ½ cup white sugar
  3. ½ cup light brown sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 2 ½ cups all-purpose flour
  7. 1 teaspoon baking powder
  8. 1 teaspoon baking soda
  9. ½ teaspoon salt
  10. 2 cups rolled oats
  11. 1 cup shredded coconut
  12. ¾ cup drained, dried, and chopped maraschino cherries
  13. ½ cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. Beat shortening, white sugar, and brown sugar together in a bowl with an electric mixer until creamy and fluffy. Add eggs and vanilla extract; stir until well incorporated.
  3. Mix flour, baking powder, baking soda, and salt together in another bowl; add to sugar mixture, blending until an even dough forms. Add oats, coconut, cherries, and chocolate chips until just mixed in.
  4. Scoop rounded tablespoons of dough onto the prepared baking sheets.
  5. Bake in the preheated oven until the edges are brown, 8 to 10 minutes. Let rest for 5 minutes, then transfer to a wire rack to cool.

The only thing I did not add the coconut, as I am not a fan of that. Everyone like them the cookies very much.??
