Ingredients
- 1 (14 ounce) can coconut milk
- ΒΌ cup maple syrup, or more to taste
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Combine coconut milk, maple syrup, vanilla extract, and salt in a blender; blend until smooth. Taste and adjust sweetness if necessary.
- Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 6 hours.
- If you don’t have an ice cream maker, transfer coconut mixture into ice cube trays and freeze until solid, about 6 hours. Once frozen, blend the frozen cubes in a high-speed blender until smooth. Serve as is, or place in the freezer to harden for about 20 minutes.
