Maple-Coconut Ice Cream

Ingredients

  1. 1 (14 ounce) can coconut milk
  2. ΒΌ cup maple syrup, or more to taste
  3. 1 teaspoon vanilla extract
  4. 1 pinch salt

Instructions

  1. Combine coconut milk, maple syrup, vanilla extract, and salt in a blender; blend until smooth. Taste and adjust sweetness if necessary.
  2. Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 6 hours.
  3. If you don’t have an ice cream maker, transfer coconut mixture into ice cube trays and freeze until solid, about 6 hours. Once frozen, blend the frozen cubes in a high-speed blender until smooth. Serve as is, or place in the freezer to harden for about 20 minutes.
