Ingredients

  1. ½ cup melted butter
  2. 2 ripe mangoes – peeled, pitted, and sliced
  3. ½ cup white sugar
  4. 2 tablespoons peach schnapps
  5. 1 cup all-purpose flour
  6. ¾ cup white sugar
  7. 2 teaspoons baking powder
  8. ¼ teaspoon salt
  9. 1 pinch ground nutmeg
  10. ¾ cup milk

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Pour melted butter into an 8-inch square baking dish.
  2. Mix mangoes, 1/2 cup sugar, and peach schnapps together in a bowl. Layer mango slices over the butter in the baking dish and pour remaining juice over all.
  3. Mix flour, 3/4 cup sugar, baking powder, salt, and nutmeg together in a bowl. Add milk and stir batter to combine.
  4. Pour or drop batter evenly over the mango in the baking dish.
  5. Bake in the preheated oven until top layer is browned nicely, 45 to 50 minutes. Let rest about 5 minutes before serving.
  6. You can use peaches in place of the mangoes, if you prefer. You can use mango liqueur in place of the peach schnapps.

Turned out pretty good but there was a few issues with the recipe. First, at 375 degrees my cobbler started to burn after 30 minutes. Temperature needs to be reduced to 350 degrees and baked for 30-35 minutes. Second, even though the topping was tasty, it was cake-like and way too thick. Half of the amount would be more than enough. Third, I used 3 medium sized mangoes and there was still more topping than fruit. I think 4 mangoes would be perfect. And last, I do not have peach schnapps or any fruit flavored liqueur so I omitted it and used the juice of all 3 mangoes and 1/2 tsp vanilla. I would say this is a cake with fresh mango instead of a cobbler.
