Curry powder and other Indian spices are used to bake juicy and flavorful chicken breasts. wonderful with brown rice. Serve with rice (white or basmati rice would also work well; brown basmati rice is extremely nice). You will have plenty of sauce to pour over the rice if you double the sauce’s recipe.

Ingredients

  1. 1 (15.25 ounce) package yellow cake mix
  2. 1 (11 ounce) can mandarin orange segments
  3. 4 large eggs
  4. 1 cup vegetable oil
  5. 1 (20 ounce) can crushed pineapple with juice
  6. 1 (8 ounce) container frozen whipped topping, thawed
  7. 1 (3.5 ounce) package instant vanilla pudding mix

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch baking pan.
  2. Combine cake mix, mandarin oranges with juice, eggs, and oil in a large bowl; beat with an electric mixer until smooth. Pour batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 to 40 minutes. Set aside to cool for at least 30 minutes.
  4. Beat pineapple with juice, whipped topping, and dry pudding mix together in a large bowl until blended. Spread on cooled cake.

This cake turned out amazing! The only difference I made was to drain the mandarin oranges ( The can is packed using water & sugar etc.) it equaled 3/4 cup. I replaced real orange juice into the orange segments. I also switched the crushed pineapple to another can of mandarin oranges with the real juice for the frosting. It is a very light and refreshing cake for sure

We love this refreshing cake! I make it in a jelly roll pan so the ratio of cake to topping is perfect for us 🙂 I made it with 3/4 cup of oil this last time and none of us noticed any difference. My husband requested it for his June birthday this year because he loves it so much.

This is one of the MOST delicious, refreshing cakes ever! My sister made it and I immediately asked her to send me the recipe! I will def follow the instructions below though- adding orange extract and halving the oil. The oil def seems like overkill but then again this cake is absolutely divine as is.

Loved the recipe. I admit I have been making this same cake for 20 years. The only thing I do differently is use the Duncan Hines Supreme Orange cake mix rather than yellow. I still love this cake.

I made this recipe for our Super Bowl party this past Sunday. Frankly, I was disappointed. I took the advise of the review that mentioned reducing the oil to 3/4 C & adding orange extract. Reducing the oil did not work for me. The cake was too dry! I did add the orange extract & even grated in about 2 TBSP of fresh orange zest. The cake itself was still lacking in flavor. (Also – boxed cake mixes are now reduced to 15+ oz, not 18. I looked it up & discovered that the extra 3 oz was 1/2 C, so I had a 2nd box & added that.) Maybe it would have been more moist without it? Hard to say.

I switched a few things instead of yellow cake I used Duncan Hines orange supreme & instead of instant vanilla pudding I used instant jello cream cheese and I made it a 3.. round 8″ pans and made it a triple layer cake EVERYONE loved it & is requesting it for our annual Mardi party..enjoy & eat cake!!!
