My favorite whoopie pie recipe is from my mother!

Ingredients
- 4 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup butter at room temperature
- 2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ½ cups milk
- ¾ cup butter at room temperature
- 1 cup confectioners’ sugar
- 2 teaspoons vanilla extract
- 2 cups marshmallow creme
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Whisk flour, cocoa powder, salt, baking powder, and baking soda in a bowl. Beat 1 cup butter and white sugar in a separate large bowl, with an electric mixer on medium speed, until mixture is creamy. Beat eggs and 2 teaspoons vanilla extract into butter mixture.
- Stir half the flour mixture into wet ingredients, followed by milk; stir remaining flour mixture into dough. Drop dough by tablespoonfuls onto baking sheets. For 25 whoopie pies, make 50 cookies.
- Bake cookies in the preheated oven until set and lightly browned, about 10 minutes. Let cool completely.
- Beat 3/4 cup butter with confectioners’ sugar in a bowl, using an electric mixer; beat 2 teaspoons vanilla extract and marshmallow creme into filling. Spread at least 1 teaspoon filling on the bottom of a cookie and top with a second cookie. Repeat with remaining cookies and filling.
- Cookies keep best in the fridge or freezer.

It was very good and fun to make. I put lemon extract and chocolate sprinkles for the filling. Definitely keeping this recipe.
This was not a good recipe. The cookie is dry and the cream was too runny. The cookies looked horrible with the cream in the middle; the cream wouldn’t set and kept running down the bottom cookie. My kids liked the taste, but I thought it was just so so since the cookie was dry.
We liked this! We made a little extra filling and found that it was too much for our liking. We also added a 1/4 teaspoon mint extract and some oreo crumbs for texture! Rich and delicious.
Really easy and really yummy!! I added one teaspoon of mint extract to the frosting and it was amazing!! I’ll be using this again!
These are delightful! The amount of filling is just right if you follow the recipe and use the amount specified. This is a keeper!

Very easy recipe, but like one of the other reviewers, I ran out of filling. I would say that 1.5 times the filling would be absolutely perfect! I also only cooked the cookies/cake for 8 minutes and that was spot on.

These whoopie pies are awesome! I gave only 4 stars because they need more filling….next time I will double the filling recipe. Overall, they are delish! 🙂
