Macaroons Con Peanut Butter

This quick and simple dip is delicious and tastes a lot like the street corn that cart vendors sell in Mexico. excellent when accompanied with Fritos® or corn chips.

Ingredients

  1. ½ cup white sugar
  2. ½ cup light corn syrup
  3. 1 ¼ cups peanut butter
  4. 2 ⅓ cups cornflakes cereal
  5. ¼ cup sesame seeds (Optional)

Instructions

  1. In a heavy saucepan over medium-high heat, bring the sugar and corn syrup to a boil, and let cook for 2 minutes. Remove from heat and stir in peanut butter. Mix in the cornflakes and if desired, sesame seeds. Drop spoonfuls onto waxed paper and let cool until set.

I’ve been looking for a recipe that I lost. These are very similar. I give it 5 star because it gave me the base of what I was looking for. I’m writing this so I don’t forget how I did it. 3/4 C brown sugar 3/4 C lite corn syrup 1/4 C butter 2 C corn flakes 1/4 C peanut butter My husband LOVED them. But, since I can take or leave Peanut Butter, I will leave it out next time.

I made a few slight changes. I used agave instead of corn syrup and 1 cup peanut butter. Instead of sesame seeds I used chopped dates (my family loves peanut butter and dates 🙂 They turned out great! Kind of a cross between a crunchy cookie and peanut butter fudge.

I made these and let my neighborhood sample them and rate them with me. These were a big hit with the adults and the kids. I wish they didn’t get so soggy from the corn syrup and would still hold a bit more of a crunch. Next time I make them I am going to add more corn flakes to make that happen.

I have a similar recipe to these “yummies” as we all them. Heat to disolve:1C sugar, 1C corn syrup. Remove from heat, stir in 1C creamy peanut butter. Pour mixture over 5-6C cornflakes, stir. Drop on wax paper. I made these last week, and they were gone in 2 days!

This recipe turned out delicious but I substituted sesame tahini (sesami butter) instead of peanut butter I also added more sugar since tahini is not sweetened. My only problem was getting the candy to stick together, I think I will just serve it over ice cream…
