Limoncello Lemon Sorbet (with or without Mint)

When I couldn’t find exactly what I was seeking for, I came up with this recipe for limoncello sorbet. It is 100% error-free. Simple, sweet, tangy, and with just the right amount of limoncello liqueur. Serve with fresh berries or a sprig of mint. Adding vodka or limoncello on top is optional.

Ingredients

  1. 2 ½ cups cold water, divided
  2. 1 cup white sugar
  3. ¼ cup fresh mint leaves (Optional)
  4. 1 lemon, zested, or more to taste
  5. 1 cup fresh lemon juice
  6. ½ cup limoncello liqueur

Instructions

  1. Combine 1 cup water, sugar, and fresh mint leaves in a saucepan over medium heat. Bring to a light boil, stirring occasionally, until sugar is dissolved, about 5 minutes. Remove from heat; stir in lemon zest. Let syrup cool slightly, about 10 minutes.
  2. Mix remaining 1 1/2 cup water, lemon juice, and limoncello liqueur into syrup.
  3. Pour mixture into an ice cream maker; churn according to the manufacturer’s instructions, 10 to 15 minutes. Freeze until firm, about 6 hours.
  4. If you don’t have an ice cream maker: Pour mixture into a small shallow dish and place in the freezer. Stir every 30 to 45 minutes in the first 2 to 3 hours to break up ice chunks; keep frozen until smooth and firm, 4 to 5 hours more.
  5. You can add more water or limoncello to taste. Please note that changing the liqueur-to-water ratio will alter the freezing properties. Pay close attention to mixture for the first 2 to 3 hours in the freezer when using less or no liqueur as mixture will freeze more solidly. If using more liqueur, be wary of adding too much as mixture won’t freeze.

THIS IS SO GOOD. OMG. Seriously, this sorbet is the bomb! It’s lemony, just a touch sweet, and then there’s this light hit of limoncello to finish it off. It’s perfect! I used the zest of 2 lemons in this, but otherwise kept everything else the same. It took 25 minutes in ice cream maker to set up (but that’s just how long my ice cream maker takes). Next time I make it, I might try 3/4 cup limoncello instead of a 1/2. The flavor of the limoncello is there, but it’s a bit light, so I might try upping it slightly in the future. But still, the recipe as-is, is completely and utterly delicious! 10 stars! Thank you so much for sharing your recipe!!
