This rich carrot soup is the ideal appetizer for a fall lunch or dinner because it’s flavored with heaps of freshly grated ginger and a touch of garlic.

Ingredients

  1. ½ cup all-purpose flour
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. 1 pinch salt
  5. ⅓ cup milk
  6. ⅓ cup light brown sugar
  7. ½ teaspoon olive oil
  8. 1 small egg
  9. ¼ cup lemon juice
  10. 1 tablespoon lemon zest
  11. butter for greasing

Instructions

  1. Combine flour, baking powder, baking soda, and salt in a small bowl. Whisk together milk, brown sugar, olive oil, egg, lemon juice, and lemon zest in a separate bowl. Add milk mixture to flour mixture and stir until batter is well combined, leaving a few lumps.
  2. Grease a large microwave-safe mug with butter. Pour batter into the mug. Microwave for 3 minutes. Remove and leave to set for 5 minutes.
  3. Sprinkle mug cake with a mixture of lemon zest and powdered sugar for extra flavor.

This recipe is way too much, i split it in 1/2 and i still had to fill 2 mugs! I don’t think that you should put the baking soda in because it acted up against to lemon juice and mad it all bubbly and cooked with holes all over top. It also tasted like baking soda once i tasted. I will not be making again.

I couldn’t taste the lemon flavor. I also microwaved it in 2 shallow bowls instead of a mug with no overflow.

Quick and tasty. Use a few drops lemon extract if you want a stronger lemon taste. Use a giant mug or two medium ones. Use only half a large beaten egg if large is all you have on hand.

I wish it had more lemon flavor. I had everything on hand which is a plus. Warning! I used the biggest mug I had and it overflowed. Use 2 mugs for this recipe.
