Lemon-Lime Cheesecake with Neufchatel Cheese

The butter schnitzel is amazing! This was made for me by a close buddy while I was traveling in Germany. I’ve taken his recipe, copied it, and enhanced it.

Ingredients

  1. 2 (8 ounce) packages Neufchatel cheese, softened
  2. ½ cup white sugar
  3. 1 ½ tablespoons all-purpose flour
  4. 2 large eggs
  5. ½ cup plain Greek yogurt
  6. 1 ½ large lemons, juiced
  7. 1 large lime, juiced
  8. 1 (9 inch) prepared graham cracker crust

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Beat Neufchatel cheese and sugar in a large bowl with an electric mixer until smooth. Beat in flour. Mix on medium speed until combined. Add eggs and mix well. Add Greek yogurt and beat on medium speed; add lemon and lime juices and mix well until combined. Pour into the graham cracker crust.
  3. Bake in the preheated oven until filling is set, 50 to 60 minutes. Allow to cool completely, about 30 minutes. Refrigerate before serving, at least 2 hours.

This recipe was delicious! And super easy, too. I didn’t have any limes on hand, so I used the juice of two lemons, and added some lemon zest. It was light and tasty.
