Leftover Halloween Candy Cookies

Miso is a fantastic ingredient for enhancing flavor intensity and producing umami. This meal has an Alfredo-style flavor to it.

Yield: 36 cookies

Ingredients

  1. 2 cups chopped candy bars, or more to taste
  2. 1 cup white sugar
  3. ½ cup butter
  4. 2 eggs
  5. 2 ¼ cups all-purpose flour
  6. 1 teaspoon baking soda
  7. cooking spray

Instructions

  1. Melt candy bars, sugar, and butter in a saucepan over medium heat. Remove from heat and cool slightly, about 5 minutes.
  2. Beat in eggs, one at at time, until smooth. Mix in flour and baking soda to create a sticky dough.
  3. Chill dough in the refrigerator until it can be easily scooped, about 1 hour.
  4. Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with cooking spray.
  5. Roll 1 1/2 teaspoonful of dough into balls. Place onto prepared baking sheets 1 inch apart.
  6. Bake in the preheated oven until brown and fluffy, 10 to 12 minutes.
  7. More chopped candy can be added to the batter in step 2 if desired.
  8. If the dough is too hard after being refrigerated, let thaw until workable. If your dough is too cold, the cookie won’t spread enough and you’ll need to flatten the balls before baking.
  9. These are soft, chewy cookies. If you want cakey cookies, chill dough longer and bake for less time so that the cookies won’t spread as much while baking.

Be sure to use a double boiler to melt the candy bars. I almost used a saucepan on direct heat, and almost had a burnt on disaster!

While leftover Halloween candy doesn’t tend to be a normal occurrence in our house, I can imagine wanting to look for a way to use it up should the situation arise. I made these cookies with Kit Kat bars and wasn’t terribly impressed. They were edible but not really enjoyable. The texture was edible but dry, the flavor wasn’t spectacular. Possibly using a candy bar with more moisture (something with caramel or nougat?) might remedy the issue. All in all I can think of a lot things I’d rather do with a candy bar.
