Even though they are delicious, these fried, chopped potatoes are not the healthiest option. For those who dislike them, the onion is optional. The restaurant where I work changed their recipe to this one, and I frequently cook it for my family. To make it more flavorful, mix in some diced tomatoes with the onion and garlic.

Ingredients

  1. 1 (14 ounce) can sweetened condensed milk
  2. 1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
  3. ½ cup lemon juice
  4. ⅔ cup kumquat puree
  5. 1 (9 inch) prepared graham cracker crust

Instructions

  1. Beat condensed milk and whipped topping together in a bowl with an electric mixer. Add lemon juice and beat until thickened. Stir in kumquat puree. Pour into the pie crust.
  2. Freeze until firm, 2 to 3 hours. Let thaw for 5 to 10 minutes before serving.
  3. You can use any pre-baked and cooled pie crust that you like.
  4. To make puree, just wash fruit, cut into quarters, and remove seeds. Place into a blender and blend until pureed.

I love it! Fresh squeezed between 2 – 2 1/2 lemons to make the lemon juice. I also zested the lemons as garnish on the top! It was a hit! The kumquat (calamansi) was from my own tree. The fruit are about 1 – 1 1/4″ in size and about 5 of them made the 2/3 cup needed for the puree. I will definitely make this again as I can make a lot using my own calamansi versus some other recipes that required me to use 3x as many of the fruit from my tree which is harder as the fruit is seasonal for me.

Right now kumquats are plentiful in Florida but no one really eats them because they are so sour. Many people just eat the sweet skins. I saw this kumquat pie recipe and tried it. The only thing I did differently is use a regular pie crust instead of graham cracker crust. If you like creamsicle ice cream you will love this pie. It’s rich and creamy and oohh so good. Really easy to make.
