This is a straightforward, tasty cheesecake that tastes well simply or dressed up with sugared strawberries or blueberries on top. Yummy!

Ingredients

  1. 1 individual package graham crackers, crushed
  2. 2 tablespoons white sugar
  3. ½ cup butter, softened
  4. 1 ½ teaspoons ground cinnamon
  5. 3 (8 ounce) packages cream cheese, softened
  6. 1 cup white sugar
  7. 3 eggs
  8. 1 ½ teaspoons vanilla extract
  9. 1 (16 ounce) container sour cream
  10. 3 teaspoons white sugar
  11. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a food processor, combine graham crackers, 2 tablespoons sugar, butter and cinnamon. Pulse until smooth. Press into the bottom of an 8×12 inch baking dish.
  3. In the food processor, combine cream cheese, 1 cup sugar, eggs and vanilla. Process until smooth. Pour over crust.
  4. Bake in preheated oven for 25 to 30 minutes, or until filling is set. Allow to cool for 2 hours.
  5. Preheat oven to 350 degrees F (175 degrees C). In a small bowl, mix together sour cream, sugar and vanilla. Spread over top of cheesecake. Bake in preheated oven for 10 to 15 minutes.

This turned out delicious! I had never made a cheesecake before but since I recently bought a spring pan I wanted to try it. I did the water-bath method and I had turned the temp down 25 degrees so it took a little longer. Next time I will keep the temp at 375 and probably would be done quicker. So yummy I served with strawberries on top.

love this recipe. I’ve made it with a pecan and coconut crust. Different variations, pineapple coconut, pineapple peach coconut. now I’m trying banana cream, with a pecan and coconut crust. going to try a chocolate mousse top but I really don’t know what I’m doing. I’m a throw something in a pan person. still the basic recipe is the best and I love it!

I made this recipe, It is closest to the changes I’ve made in other recipes. I substituted 9% MF greek yogurt for the sour cream and used jumbo eggs. I used lemon Yogurt and added the zest of 3 lemons. It was fantastic!! Not one piece was left over. I baked in a water bath and cracked the oven to let it cool when it was done cooking ,after an hour I moved it to the counter to cool a few hours before moving it to the fridge to chill for 12 +hours. This is easy to flavour as you can use whatever flavour of yogurt you like.

Very easy to make. I’ve made it for over 3 years at least 3 times a year and it’s the first dessert item gone! The only challenge is baking it just right, or it’s to soft/ a little burnt. Best cheese cake ever.

Baking time of the cheesecake is 50-60 minutes, not 25-30. Recipe also needs adjusted to remove the specific measurement amounts which don’t update if the “servings” is changed. Otherwise, the cheesecake itself is amazing! Oh, and using the food processor made it effortless!
