Made with almond flour and an erythritol sweetener (like Swerve®), these low-carb, keto-friendly lemon bars are sweetened with erythritol. If desired, sprinkle confectioners’ sugar on top.

Ingredients

  1. 2 ½ cups low-calorie natural sweetener (such as Swerve®)
  2. 8 tablespoons butter, melted
  3. ½ teaspoon almond extract
  4. 1 ½ cups low-calorie natural sweetener (such as Swerve ®)
  5. ¾ cup almond flour
  6. 4 eggs
  7. 3 lemons, juiced

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Blend 2 1/2 cups sweetener, melted butter, and almond extract together in a bowl. Press crust mixture into an ungreased 9×13-inch pan.
  3. Bake crust in the preheated oven for 15 to 20 minutes. Remove from oven and leave oven on. Cool crust for 10 minutes.
  4. Mix 1 1/2 cups sweetener and almond flour together in a bowl. Whisk in eggs and lemon juice. Pour over the cooled crust.
  5. Bake bars in the hot oven for 20 minutes. Cut into 18 bars.
  6. Sprinkle with powdered sweetener for garnish if desired.

It was very sweet and I had already cut down on the sweetener based on another review. I mixed in some almond flour for the crust also.

It would be good to use half sugar and half low calorie. I used Stevia and it needs a little bit of sugar combination. I also added a courser type of almond meal, it seemed to give it more consistency. It has potential, just needs a bit of tweaking. Will try again.

DO NOT TRY THIS RECIPE! It is way to sweet, and tastes way to much like almonds.

Tasty, especially if you’re on a keto diet and familiar with the sweetness of this kind of sugar substitute, but difficult to cut without breaking a lot of the pieces.
