These nacho tacos have crunchy taco shells that are stuffed with cheese sauce blended with sautéed ground beef, onion, and chili powder.

Ingredients

  1. 1 cup heavy whipping cream
  2. 2 tablespoons powdered zero-calorie sweetener (such as Swerve)
  3. 1 tablespoon vodka
  4. 1 teaspoon vanilla extract
  5. ¼ teaspoon xanthan gum
  6. 1 pinch salt

Instructions

  1. Combine cream, sweetener, vodka, vanilla extract, xanthan gum, and salt in a wide-mouth pint-sized jar. Blend cream mixture with an immersion blender in an up-and-down motion until cream has thickened and soft peaks have formed, 60 to 75 seconds.

  3. Cover jar and place in the freezer for 3 to 4 hours, stirring every 30 to 40 minutes.
  4. The vodka is optional, however it really helps keep the ice cream scoopable and you don’t taste it!
  5. Freezing for 3 to 4 hours produces the best consistency, however if you’d like to soften it a bit, 10 seconds in the microwave does the trick, or remove from the freezer 15 minutes ahead of time.
  6. You can pulse granular sweetener in a blender or food processor to achieve a powdered consistency.
  7. Use different flavored extracts for variety.

taste is good but even adding vodka does not keep this from becoming rock solid when frozen. I’ve read 2 tablespoons of vodka also would help, but it does not. Will keep searching.

This is a very versatile recipe. I omitted the vodka and did an extra splash of vanilla. I added 3 big spoons of a deep rich quality chocolate, one extra tbsp of Monkfruit, and a heavy dash of cinnamon. Wow!!!!! This one is a keeper.

Very good recipe. I made it exactly like the recipe, except I didn’t have any vodka. Was really good and easy. The second time I made it I added 3 tablespoons of unsweetened cocoa powder and an additional tablespoon of monk fruit. Really good and chocolatey . Some may prefer an additional tablespoon of monk fruit. The additional cocoa powder adds 3 more carbs, or 1 carb per serving. It may even stretch the servings from 3 to 4. I’m not sure that it will freeze up with the addition of the cocoa powder, It’s been in the freezer for 3 hours and is still not freezing. It makes a great tasting mousse. Thanks for an easy and tasty treat. (It took awhile, but it finally began to freeze, so just leave it overnight for a frozen dessert.)

This treat was a quick, easy fix for my sweet tooth. I sprinkled a little cinnamon on top for one serving and fresh blueberries for another. Delish.
