Ingredients
- ½ cup butter
- ⅓ cup white sugar
- ⅓ cup brown sugar
- 1 egg
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ cup rolled oats
- 1 cup jelly beans, cut in half
Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Butter 2 cookie sheets.
- Beat butter and sugars together using an electric mixer until creamy. Beat in egg, salt, baking soda, baking powder, and vanilla extract. Stir in flour and oats until just blended. Fold in jelly beans.
- Drop rounded spoonfuls of the cookie dough about 2 inches apart onto the prepared cookie sheets.
- Bake in the preheated oven until edges are golden, 9 to 10 minutes.

I will make it again but I may add some coconut which I love. I used gourmet mini jellybeans and didn’t have to cut them in half. Delicious,
I did the recipe exactly, I liked it. Next batch I used sour patch kids, and shortning instead of butter. I liked those better. This is a good cookie recipe by itself. Next weekend I’ll try chocolate chips.
Made as directed with one change. Used Gum drops also known as spice drops. Very good.
Kids love these cookies! They are fun looking and fun to eat! I will warn you cut up jelly beans before starting. That will take more time than anything else in this recipe. I only chopped up 3/4 cup of jelly beans and I am glad I didn’t go to 1 cup. I think next time I might go for 1/2 cup. It just depends if you want more jelly beans than cookies or smaller amount. Nothing else I would change. I cooked them 9 minutes. Great for Easter!
