Ingredients

  1. 1 (18.25 ounce) package chocolate cake mix
  2. 2 pints part-skim ricotta cheese
  3. ¾ cup white sugar
  4. 1 teaspoon vanilla extract
  5. 4 eggs
  6. 1 (3.9 ounce) package instant chocolate pudding mix
  7. 1 cup milk
  8. 1 (12 ounce) container frozen whipped topping, thawed

Instructions

  1. Prepare cake mix as directed on box. Pour batter into 9 x 13 x 2 inch greased baking dish. Set aside.
  2. Combine ricotta cheese, sugar, vanilla, and eggs. Blend well. Spread mixture evenly over the top of the cake batter.
  3. Bake at 350 degrees F (175 degrees C) for 75 minutes if using a glass baking dish, 90 minutes if using a metal pan.
  4. Blend pudding mix and milk until thickened. Blend in whipped topping. Spread over cooled cake.

I used all dark chocolate ingredients instead of milk chocolate purely out of preference. It was pretty good, the only downside is it is very decadent and hard to eat more than one piece without feeling sick! I ended up substituting brownie mix for the chocolate cake mix and it tastes good anyway. If you do this, I would suggest cooking the whole thing for less time as the brownie part was a bit dry. The ricotta layer is reminiscent of cheesecake, the top like a very light mousse. May make again.

This was good without the mousse, and it was GREAT with it. I tried putting half the batter in the pan, then the ricotta, then the rest of the batter because so many reviews said it didn’t sink, but the ricotta sank anyway. So it was like we had ricotta on the bottom and cake on top which was just fine. I baked it for just under an hour in a glass pan. Definitely don’t bake it as long as the instructions say! The recipe works fine with 15.25 oz box cake and I think my ricotta was a little under the instructed amount too. I used 1 less egg and it turned out great. I thought the ricotta layer was slightly sweet. With the cake it makes a mildly sweet cake, which is then made sweeter with the mousse.

Follow the instructions for the metal pan. You won’t be disappointed. I thought it would be dry or burnt after 1 hr. 30 mins, it was not due to the ricotta cheese. We have had this as a dessert in restaurants and I wanted to make something special for a 20th wedding anniversary.

I’ve been making this cake for years! I’ve made it with all different variations white cake chocolate topping chocolate cake vanilla topping.. today I try something completely different.. i used lemon cake like another person suggested and I added some lemon zest to the ricotta mix, and I put a handful of fresh blueberries in the cake mix.. I’m having company tonight so I hope It comes out as spectacular as it usually does!

I just made this cake for a dinner party that I had and it was a hit! I rated this as just average based upon both expectations and the quality and cost of the ingredients. While the cake came out exactly as the picture on the website the taste was rather blah with no distinguishing flavors. I was expecting a cake like cannoli dessert. The topping lacked much of a chocolate flavor either.
