Grilled Blackberry Brioche Bread Pudding

Make a package and throw it on the grill instead of heating up the house to bake a blackberry brioche bread pudding in the summer. To serve, scoop into dishes and garnish with whipped cream or ice cream.

Ingredients

  1. 1 cup milk
  2. 2 eggs
  3. ½ cup white sugar
  4. 1 teaspoon vanilla extract
  5. ½ teaspoon sea salt
  6. 12 ounces brioche bread, cut into 3/4-inch cubes
  7. 1 pint blackberries, halved
  8. 4 ounces cream cheese, chilled and diced (Optional)
  9. aluminum foil (such as Reynolds Wrap®)
  10. 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat an outdoor grill for medium-high heat, approximately 375 degrees F (190 degrees C).
  2. Whisk milk, eggs, sugar, vanilla extract, and salt together in a large bowl. Fold in bread cubes, blackberries, and cream cheese. Set aside until liquid is absorbed, about 15 minutes.
  3. Place a layer of heavy duty aluminum foil or 2 layers of regular aluminum foil on a flat surface. Brush aluminum foil with melted butter.
  4. Arrange bread mixture in the center of the aluminum foil. Bring short ends together; fold over twice to seal. Bring sides in, leaving room for steam to form; fold over twice to seal.
  5. Grill over indirect heat until bread pudding is puffed, liquid is absorbed, and edges are toasty, about 35 minutes.
  6. Remove package from the grill; open carefully using tongs or mitts. Cool for 10 minutes.
  7. For easier measuring, 12 ounces of brioche bread is about 4 cups cubed.

Excellent recipe, curious as to whether or not it can be cooked in the oven and if so would that also be about 15 min at 350 degrees??

Excellent. The cream cheese adds the extra touch to make it excellent. I lined a cast iron pan with foil and put a lid on it. I cooked on the upper she’ll of the cool side of the grill and it was perfect.

So, so freaking awesome. Why didn’t I ever do this before? Made it the first time as written…yum. Made it again with raspberries… super yum. Oops, I did it again, but with blueberries and lemon cream cheese sauce…OMG. So. Good. Food of gods. Gonna do strawberry rhubarb next….
