Green Tea and Azuki Bean Bundt® Cake

My mother’s unique cake recipe, which our friends and family adore. This rich, tasty cake has a faint green tea flavor. To suit your tastes, feel free to ad more matcha green tea powder.

Ingredients

  1. 2 cups white sugar
  2. 1 cup butter, softened
  3. 1 cup milk
  4. ½ cup vegetable oil
  5. 5 eggs
  6. 3 cups all-purpose flour, sifted
  7. 1 tablespoon matcha green tea powder, plus more for dusting
  8. ½ teaspoon baking powder
  9. ½ teaspoon salt
  10. 1 (18 ounce) can azuki beans, drained
  11. 1 teaspoon confectioners’ sugar, or to taste

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 12-cup fluted tube pan (such as Bundt®).
  2. Beat white sugar, butter, milk, and vegetable oil together in a bowl using an electric mixer until smooth and creamy. Beat eggs, 1 at a time, into creamed butter mixture, beating well before adding the next egg.
  3. Whisk flour, green tea powder, baking powder, and salt together in a separate bowl; slowly mix into creamed butter mixture until batter is smooth. Fold azuki beans into batter; pour into the prepare tube pan.
  4. Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 70 minutes. Cool cake.
  5. Invert cake onto a serving plate and dust with green tea powder and confectioners’ sugar.

This is a dense, rich cake – a pound cake with the surprise of azuki beans and matcha. I was wary of using so much sugar and butter but followed the recipe and it was delicious. I made 2 half-sized bundt cakes and gave one away to a grateful friend. Thank you for the recipe, I’ll be sure to make this cake again.

I used whole wheat flour instead of white, and added baking powder. This sweet cake disappeared quickly! Making half the recipe(I used only 2 eggs, and 1 tsp. baking powder), this bakes for 45 minutes.
