Grad Cap Cookies

  5.0 – 2 reviews  • Peanut Butter Cookie Recipes

Warm, cheesy, crunchy, and crispy! A novel and tasty way to use pumpkin is in this savory bread pudding. It can be a hearty side dish or a main entrée when sausage is added. This dish would look wonderful on a holiday breakfast table or at Thanksgiving.

Prep Time: 1 hr
Total Time: 1 hr
Servings: 50
Yield: 50 treats

Ingredients

  1. 10 (4 inch) pieces pull-apart red string licorice (such as Twizzlers®)
  2. 50 miniature chocolate covered peanut butter cups, unwrapped
  3. 1 cup prepared chocolate frosting
  4. 50 chocolate-covered graham cracker cookies
  5. 50 candy-coated milk chocolate pieces (such as M&M’s®) (Optional)

Instructions

  1. Cut licorice candy whips into 2-inch pieces, and pull them apart to make small strings. Set aside.
  2. Place a miniature peanut butter cup upside down on a work surface; top with a dab of frosting. Center a chocolate-covered graham cracker cookie onto the frosting to make a small cap with a mortarboard. Gently press the cookie onto the peanut butter cup.
  3. Place a small dab of frosting in the center of the graham cracker cookie and attach a red licorice string as a tassel, letting the tassel drape over the edge of the cookie. Place a candy-coated milk chocolate piece onto the center of the cookie over the end of the tassel to make a button.
  4. Repeat with remaining candies and cookies to make 50 graduation caps with tassels.

These are very cute and easy to make. I use Ghirardelli squares instead of graham cracker cookies. To make it easer to center the peanut butter cup, I place a Ghirardelli square (flat side down) on the table, put a dab of frosting on the bottom of the peanut butter cup and place it in the center of the square, then turn the cap over and place the tassel and candy-coated chocolate piece in the center.

Cute and easy! A fun treat to make and put out for graduation or to top a cupcake.
