Here is my interpretation of the taco recipe that is currently the craze throughout the globe. When you make these, you’ll see why it’s causing such a stir—really, it’s blowing up everywhere. Make some of my Beef Birria first, and then serve it with some outstanding beef and cheese tacos to take it to the next level.

Yield: 1 to 9 – inch pie

Ingredients

  1. 1 recipe pastry for a 9 inch double crust pie
  2. 1 ½ cups white sugar
  3. ½ cup all-purpose flour
  4. 4 cups fresh gooseberries
  5. 2 tablespoons butter

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C.) Roll dough out to fit a 9 inch pie plate. Place bottom crust in pie plate. Roll out top crust and set aside. In a small bowl, mix together sugar and flour.
  2. Place 2 cups of berries in the pastry lined pie pan and sprinkle with half of sugar mixture. Put in remaining two cups of gooseberries, then sprinkle on remaining sugar mixture. Dot with butter. Cover with top crust and seal and flute edge. Cut a few slits in the top to allow steam to escape.
  3. Bake in the preheated oven for 35 to 40 minutes, or until golden brown. Allow to cool. You may wish to cover the edge of pie with foil to prevent over-browning. If you do so, remove the foil for the final 15 minutes of baking.

I added 2 C. Strawberry’s to make it sweeter and only one cup sugar. I have green gooseberries so they are on the tart side. Very Yummy combination. Thank you.

Easy recipe & very good. I added about 1/4 cup extra sugar. Didn’t make it too sweet as gooseberries are very tart. Hubs favorite pie

I made a pie with a lattice crust, which may be the difference. Instruction step 2, layering of the ingredients, did not work for me. My pie has an undissolved layer of sugar and flour on top of the gooseberries in the center, which is decidedly unappetizing. I’ll go back to macerating until all ingredients are at least moistened.

Great recipe and you can add cranberries or tomatillos for half of the fruit and it’s even better!

Wonderful fruit many are not familiar with.. I bring this to parties and it’s one of my most asked about dishes. Definitely need to cover edges of pie with foil.. to me it makes the coloring look prettier. I always top the pie with Sugar In the Raw.
