During bird hunting season, the family favorite. Chicken-fried pheasant is so easy to make and delicious, and unless you tell them it’s wild game, they have no idea. is quick to prepare and cook with few ingredients. If you’re a hunter, your first challenge is finding the bird in the first place! The second issue is that no matter how much you cook, there are never any leftovers. IF there is any leftover, it makes fantastic cold sandwiches!

Ingredients

  1. 4 cups chopped fresh peaches
  2. 2 tablespoons white sugar
  3. 2 tablespoons gluten-free all-purpose baking flour
  4. 1 teaspoon ground cinnamon
  5. ½ teaspoon ground nutmeg
  6. ¼ cup unsalted butter, cut into small pieces
  7. 1 cup gluten-free all-purpose baking flour
  8. ¾ cup white sugar
  9. ¾ cup soy milk
  10. 1 teaspoon gluten-free baking powder
  11. 1 teaspoon xanthan gum
  12. ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Prepare the peaches: Mix peaches, sugar, flour, cinnamon, and nutmeg together in a bowl. Pour into a 9×13-inch casserole dish and dab butter pieces over top.
  3. Make the topping: Mix flour, sugar, soy milk, baking powder, xanthan gum, and salt together in a bowl. Sprinkle over peaches in the baking dish.
  4. Bake in the preheated oven until golden brown, about 45 minutes.
  5. Remove from the oven and let cool before serving.
  6. You can substitute regular milk for soy milk if desired.

This was pretty good even though I found it very sweet. Next time I’ll cut down on the sugar. Using soy milk doesn’t make a big difference, so it’s a nice way to cut down on fat. Thank you for the recipe.

I made this for a birthday treat and was disappointed. The peach filling was wonderful, however, the topping was spongey and chewy. It tasted okay, but the texture was not pleasant to me. Any thoughts why this is so? I did use almond milk rather than soy or regular milk.

I had to use canned peaches with a few spoonfuls of the liquid as they weren’t in season, but other than the peaches not being fresh, this cobbler was exactly like the old-school gluten version. Yum! My gf friend ate some and she loved it too!
