Fruit In Crust Cheesecake

I got this fantastic and simple recipe from a friend.

Servings: 12
Yield: 1 to 9 – inch pie pan

Ingredients

  1. 1 cup all-purpose flour
  2. 1 cup quick cooking oats
  3. ½ teaspoon baking powder
  4. ⅔ cup packed brown sugar
  5. ½ cup butter
  6. 1 cup fruit preserves
  7. ½ cup confectioners’ sugar
  8. 2 tablespoons milk
  9. 1 ½ teaspoons vanilla extract
  10. 1 (8 ounce) package cream cheese
  11. 2 cups frozen whipped topping, thawed

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In medium bowl, combine flour, oats, baking powder, sugar and butter. Mix until crumbly.
  3. Reserve 1 cup crumb mixture, set aside. With remaining crumbs, pat onto bottom and sides of 9 inch pie pan.
  4. Spread fruit preserves over unbaked crust and top with reserved crumb mixture.
  5. Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until golden brown. Cool.
  6. In a large bowl, combine cream cheese, vanilla, milk and confectioners sugar. Blend until smooth. Fold in the whipped topping. Spoon into baked pie crust. Store in refrigerator.

I used to make this exact recipe years and years ago. I was disappointed that I lost the recipe. Well…. I have several jars of jam that people have given me. Time to use at least a few of them up. I am so glad to have found the recipe again!! I love the taste combination of the oats, jam and cheesecake like filling. I used to use strawberry jam and love it. But this time I have a few other flavors of jam that I want to try. It is a very easy recipe to make.
