Raspberry cake that is delicious and may be made with either fresh or frozen berries. Easily freezes.

Ingredients

  1. ½ cup brown sugar
  2. 2 tablespoons all-purpose flour
  3. 1 tablespoon unsalted butter
  4. 1 cup all-purpose flour
  5. ¾ cup white sugar
  6. ½ teaspoon baking powder
  7. ¼ teaspoon baking soda
  8. ¼ teaspoon salt
  9. ⅓ cup buttermilk
  10. ⅓ cup unsalted butter, melted and cooled
  11. 1 large egg
  12. ½ teaspoon vanilla extract
  13. 1 ¼ cups frozen raspberries

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square pan.
  2. Mix brown sugar, flour, and butter together in a bowl to make a crumbly topping. Set aside.
  3. Combine flour, white sugar, baking powder, baking soda, and salt in a large bowl.
  4. Beat buttermilk, melted butter, egg, and vanilla extract together in another bowl. Stir into dry ingredients. Spread batter into the prepared pan. Sprinkle with raspberries, then with crumbly topping.
  5. Bake in the preheated oven until well browned and a toothpick inserted into the center comes out clean, 35 to 40 minutes.

Made exactly as written. While the flavor is great this takes much longer to bake. It was an additional 20 minutes so a total of an hour before a toothpick came out clean and by then the edges were close to burnt. Just something to be aware of but definitely worth making.

I had already made the streusel and batter when I checked and realized I did not have frozen raspberries. I did have frozen blueberries so I subbed them for the raspberries. It took 65 minutes for the center to completely bake, not 35-40 minutes as stated. It was well worth the wait, this cake is delicious! Can’t wait to try it with the raspberries. Thanks for sharing your recipe!
