Ingredients
- 3 egg whites
- ½ teaspoon vanilla extract
- ½ teaspoon lemon extract
- ¼ cup white sugar
Instructions
- In a large glass or metal mixing bowl, combine egg whites, vanilla and lemon extract. Beat until foamy. Gradually add white sugar, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely.
- To bake: Preheat oven to 350 degrees F (175 degrees C.) Bake pie in the preheated oven for 10 to 15 minutes, or until golden brown.

I was working with a different recipe from a magazine and it wouldn’t even get to soft peaks with 3 different tries. This one came out perfectly. You do need the cream of tarter like recommended above. The whipping process once the sugar is in takes a while, about 20 minutes- I’m not positive because I wasn’t timing it.
I used Truvia, and it still turned out fluffy and turned golden in the oven. I didn’t have the lemon extract so I used a little juice. It’s on a chocolate pie I made with Truvia, also. I haven’t tasted the combined effort as yet, but it tasted good going into the Pillsbury crust. Thanks!
This was a very easy recipe, tastes delicious and it came out perfectly. The only thing I omitted was lemon extract because I didn’t have it in the house.
I didn’t have lemon extract, but it sounds good. The trick with meringue is to have a dry bowl and beaters, and to not overbeat it. Worked for me.

I omitted the lemon juice. Came out fine
mine was like…never mind what it was shaped like. it became separated after a few minutes, it was really watery. After a struggle, it tasted like foam. sweet foam.
Just made this and it’s easy turn out great and will definitely be using this again.

This is a good standard meringue. You can add 1/4 teaspoon of cream of tartar to help stabilize the meringue if you like.
