The Cuban equivalent of rice pudding is this Arroz with Leche. Compared to conventional rice pudding, it is richer and sweeter. Being a native of Cuba, I much like this rendition of this delectable delicacy over any other. Add a dash of cinnamon or a cinnamon stick as a garnish before serving for extra flair.

Ingredients

  1. 1 ¼ cups creamy peanut butter
  2. 1 cup margarine
  3. ¾ cup white sugar
  4. ¾ cup packed light brown sugar
  5. 2 eggs
  6. ½ teaspoon vanilla extract
  7. 2 ¼ cups all-purpose flour
  8. 1 teaspoon baking powder
  9. 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a large bowl, cream together the peanut butter, margarine, brown sugar and white sugar. Beat in the eggs and vanilla. Combine the flour, baking powder and baking soda; stir into the peanut butter mixture. Form dough into walnut sized balls and place them 2 inches apart onto ungreased cookie sheets. Dip a fork into flour and criss cross each cookie to flatten slightly.
  3. Bake for 12 to 15 minutes in the preheated oven, until just lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

They’re delicious! I altered the recipe a bit. I doubled the vanilla. I reduced the sugars to a combined total of about 1 1/4 cup. I also added between 1/4 to a half of a cup of whole sour cream. I used organic ingredients for most of the recipe.

Fast & easy I ve made these twice & split the recipe both times making about 24 cookies First batch were just ok Second time added 1/4 cup additional flour & peanut butter a cooked at 350 for 10 min instead of 375 for 8 Better cookie for sure creamy & light I rolled a few in sugar which was a nice touch thxs

Peanut butter cookies should not have margarine or butter just peanut butter. This was bland and dry falling apart. Followed recipe exactly and had flavorless cookies that were not presentable

The flavor was pretty good, but the only suggestion I would say is to bake at 350 for 10 min. 375 is too hot for pb cookies

This cookie recipe is easy and basic. But it doesn’t have much peanut butter taste. My cookie eaters are not impressed. It looks like other bakers have added chocolate chips and other fun things to the cookies. I had some choc chips on hand and put them on top of the cookie at the end of the baking time. I’ll probably try making a filling of some type to put between 2 cookies and make a cookie sandwich. 🙂

The recipe was easy to follow and baked the first time. I created a twist by adding a piece of Dove chocolate pressed into the center of the ball of dough and trying to wrap the chocolate with the peanut butter cookie dough. If you need to add dough to enclose the cookie, add liberally. Still press the fork to make it look like a peanut butter cookie. Plan on the higher time limit of 15 min. A great surprise of the chocolate with the cookie.

The recipe said walnut sized balls but i think smaller would have been better. Would cook at 350 and for not as long as the recipe says because mine burned a bit on the bottom and cooked pretty fast. The batter was nice and easy to work with. My husband liked them!

I followed the recipe as written and the only thing I found was that there was not a strong peanut butter taste. Perhaps it was because I used a store brand peanut butter instead of Jiffy! Otherwise, they were delicious and melted in my mouth.
