No ice cream equipment is necessary for this simple ice cream made with coconut cream and canned pineapple in juice. A blender, a silicone muffin pan, or ice cream pop molds are all that are required.

Ingredients

  1. ½ cup heavy cream, chilled
  2. ½ cup sour cream
  3. ¼ cup confectioners’ sugar
  4. ½ teaspoon vanilla extract

Instructions

  1. Combine the cream, sugar, sour cream and vanilla in a medium bowl. Use an electric mixer to whip to stiff (but not grainy) peaks. Chill until using. Use within one day.

4.9.22 Easy Whipped Cream isn’t the delicate, light consistency that you normally get (perhaps more like a light sauce?), but it tastes pretty good. One thing that I didn’t like was the sour cream flavor dominated a bit too much (maybe more vanilla?). Recipe doesn’t say how long to beat/mix, but I probably gave it 4 minutes or so at a high speed. Doubtful I’d make again, but at least I was able to use up the last of a container of whipping cream and just about finished off the sour cream that was in the fridge. We did enjoy it over an apple bundt cake for dessert.

Did like others and cut the sour cream to 1/4 cup, heavy cream to 3/4 cup, mostly because I had exactly 1/4 cup left that I had to use. This was my first attempt and I think it came out pretty darn good. It was the consistency of Cool Whip – not sure if this is the intended result or I didn’t whip enough but it exactly what I was looking for. It was a very easy recipe to follow. Saved to my favorites!

Really unique! But not nearly sweet enough. It was almost a savory cream. I followed the recipe and then after tasting, I added another 1/4 cup of powdered sugar and it was great!

1/4 cup of sour cream, 3/4cup heavy cream. Followed the rest exactly. Also added a little cinnamon since this was going on banana cream pie. I liked this better than the 1-2-1 standard whipped cream recipes. Thicker, a little cheesecake-reminescent.

WOW!!!! I’m sooo surprised and pleased with this recipe! I just knew I was going to mess this up but it turned out beyond awesome! After reading the reviews. I only used 1/4 cup of sour cream instead of the full cup and I used the whole 16oz carton of heavy whipping cream! We eat homemade whip cream on our pancakes and this recipe just replaced my old one!

If I could give zero stars I would. It tasted a little too much like sour cream and there wasn’t enough flavor, I couldn’t eat it it was so bad. I would not recommend even trying it, don’t waste the ingredients.

Tasted very good but would not thicken at all so we weren’t able to use it for our pudding pie. But husband is saving it to add to his coffee…too bad it didn’t work for us.
